Two bags of mushroom coffee can sit side by side on the same shelf, list the same four mushrooms, and contain wildly different amounts of the compounds you're paying for. The difference is printed on the back — it's just written in a language nobody teaches you.

Mushroom coffee went from health-food curiosity to grocery-aisle staple in about five years. That growth pulled in a lot of good producers and a lot of opportunists, and because the category is young, labeling conventions are loose. A bag can say "Lion's Mane" in large type on the front while the powder inside is mostly ground oats.

This isn't a conspiracy — it's a supply chain quirk that most shoppers have never had explained to them. Once you know what to look for, you can size up any mushroom coffee on the shelf in about fifteen seconds. Here's the whole thing.

You're drinking one of two very different parts

A mushroom is only the visible tip of a much larger organism. Underneath it runs the mycelium — a dense, thread-like network that spreads through soil or wood, absorbing nutrients. What pushes up above the surface is the fruiting body: the cap, the stem, the part you'd recognize as a mushroom.

Both parts are real, and both are studied. But they're not interchangeable, and they're not equally easy to produce.

Fruiting bodies take time. Depending on the species, a grower may wait weeks or months for a flush, and Chaga in particular is typically wild-harvested from birch trees in cold northern forests rather than farmed at all. Mycelium is dramatically faster and cheaper: you inoculate a bag of sterilized grain, wait a couple of weeks, and the mycelium colonizes it.

That last detail is where the whole story turns.

The grain problem

Here's what most people don't realize: when mushroom mycelium is grown on grain, it is extremely difficult to separate the two afterward. The mycelium threads its way through the substrate at a microscopic level. So in a large share of commercial products, it simply isn't separated. The grain and the mycelium are dried and milled together and sold as a single ingredient.

On a label, that shows up as phrases like myceliated biomass, mycelium on oats, full-spectrum mycelial culture, or sometimes just organic mushroom powder with no further detail. Independent analyses of these products have consistently found that a large majority of the dry weight is starch from the grain, not fungal material.

You are, to a meaningful degree, paying mushroom prices for oat flour.

To be fair: mycelium is not worthless. In Lion's Mane, for instance, researchers have identified two families of compounds of interest — hericenones, concentrated in the fruiting body, and erinacines, found in mycelium. Some producers deliberately use mycelium for that reason, and do it properly by separating it from the substrate. The problem isn't mycelium. The problem is grain sold as mushroom.

The number on the label that actually means something

If a bag lists a potency figure at all, it will usually be one of two things. They sound similar. They are not.

Polysaccharides is a broad category of long-chain carbohydrates. Beta-glucans — the fungal compounds most associated with immune support in the research literature — are polysaccharides. But so is starch. So a product that is 60% ground oats can legitimately advertise a high "polysaccharide content," because the test is measuring the oats right along with the mushroom.

Beta-glucans is the specific measure. It's a harder, more expensive test, and it can't be inflated with grain. When a brand publishes a beta-glucan percentage, it's telling you something real — and it's telling you it had nothing to hide.

Rule of thumb: a label that quotes polysaccharides but not beta-glucans has usually made that choice on purpose.

Extraction: why raw mushroom powder mostly passes through you

Even a bag of pure, correctly grown fruiting body can underdeliver, because of how fungal cells are built.

Mushroom cell walls are made largely of chitin — the same tough structural material found in insect shells. Human digestion doesn't break it down well. Grind a dried mushroom into powder and stir it into hot water, and much of what's inside those cells stays locked inside them.

Extraction is the process of getting past that wall, and there are two methods that do different jobs:

  • Hot water extraction uses sustained heat to rupture chitin and release the water-soluble fraction — principally the beta-glucans.
  • Alcohol extraction pulls the fraction that water can't touch: triterpenes and other non-water-soluble compounds, which are especially significant in species like Chaga and Reishi.

Run only one of those and you've collected roughly half of what the mushroom had to offer. Dual extraction runs both and recombines the results, which is why it costs more and why brands that do it tend to say so on the front of the bag.

You'll also see an extract ratio on better labels — something like 8:1, meaning eight kilograms of raw mushroom went into one kilogram of finished extract. No ratio and no mention of extraction usually means you're holding straight milled powder.

The fifteen-second label test

Green flag "100% fruiting body extract" The actual mushroom, no grain filler. This is the clearest single signal on any bag.
Red flag "Myceliated biomass" / "cultured on organic oats" Mycelium that was never separated from its grain substrate. Much of the weight is starch.
Green flag "Dual extracted" or "hot water + alcohol extraction" Both the water-soluble and alcohol-soluble compounds were captured, not just one.
Red flag "Polysaccharides: 40%" with no beta-glucan figure Starch counts as a polysaccharide. The number may be measuring grain.
Green flag Each mushroom listed with its own milligram amount You can see what you're actually getting per serving, species by species.
Red flag "Proprietary blend — 2,000 mg" A single number for the whole mix. One mushroom could be 1,950 mg of it and the rest a pinch.
It shows up in the cup, too

This isn't purely a nutrition question. Grain-heavy powders taste like grain. They read starchy and flat, they can leave a chalky film, and they're the reason "mushroom coffee tastes like dirt" became a common complaint — one that has more to do with filler than with fungi.

Properly extracted fruiting body dissolves cleanly and carries a deep, roasted, faintly cocoa-like character that sits comfortably alongside coffee instead of fighting it. If you tried mushroom coffee once, disliked it, and wrote off the category, there's a reasonable chance you were tasting substrate.

Brew note, while we're on taste: mushroom extracts are more temperature-sensitive than coffee grounds. Water straight off a rolling boil can scorch the blend and turn the cup sour and sharp.

We recommend 160–165°F. If you don't own a variable-temperature kettle, boil as usual and let it sit uncovered for about 90 seconds before pouring. It's a small change that makes a noticeable difference.

  • Does it say fruiting body? If the word appears nowhere on the package, assume it isn't.
  • Does it name an extraction method? Hot water, alcohol, or ideally both.
  • Is there a beta-glucan figure, not just polysaccharides?
  • Are the mushrooms listed with individual milligram amounts?
  • Does the ingredient list contain oats, rice, barley, or "biomass" where you expected mushroom?
  • Is the coffee or coffee-alternative base itself clean — no artificial sweeteners, synthetic colors, or dyes?

Common questions
Is mycelium always worse than fruiting body?

Not inherently — mycelium contains compounds of its own, and some producers use it deliberately and separate it properly from the substrate. The issue is that most commercial mycelium products don't separate it, so you're buying grain by weight. Fruiting body avoids the ambiguity entirely.

What is dual extraction, in one sentence?

Running mushrooms through both a hot water extraction and an alcohol extraction, then recombining them, so you capture water-soluble compounds like beta-glucans and non-water-soluble compounds like triterpenes instead of only one group.

Why do beta-glucans matter more than polysaccharides on a label?

Beta-glucans are a specific fungal compound. "Polysaccharides" is a broad category that also includes starch, so a grain-heavy product can report a high polysaccharide number without containing much mushroom.
